The vision for Lucy and William Lowe was to capture the taste of the English seasons into a spirit. The way the husband and wife team did this was by selecting botanicals from the meadows near their home in East Anglia and distilling each one individually to preserve the purity of its essence. Combine this with a respect for the science of gin making and a love of nature and it’s no surprise that they’ve been named the most innovative distillery in the world three times.
“To get that distinctive smooth finish in every sip, we created a unique vacuum distillation in which temperature, timing and pressure are just three of the nine variables tailored to each botanical,” says William. “By accessing cold temperatures, we’re able to achieve a level of precision vastly beyond that of traditional distillation.” And if gin lovers everywhere want to see it in action, then head to the Cambridge Gin Laboratory, an interactive space in the city centre.
Cambridge Dry Gin
Locally grown and foraged botanicals including rosemary, angelica, blackcurrant leaf, rose petal and lemon verbena give this gin a fresh, herbaceous flavour profile that’s quintessentially English.
Try it in a Cambucha
Add 35ml Cambridge Dry Gin, 125ml kombucha and 20ml elderflower cordial to a highball over ice, mix then garnish with a sprig of fresh mint.
From its seaside home on the Wirral Peninsula, Tappers Distillery hand-crafts its gin in small batches of between 40 and 100 bottles from ingredients sourced as locally as possible. The story began in 2016 with founder Steve Tapril, who wanted to produce the very definition of British gin with juniper at its heart. The most recent of the nine in his range is Brightside Coastal London Dry.
“I want to transport the drinker to our rugged seaside surroundings, through taste and aroma,” says Steve. “I love experimenting with ingredients and only the finest-quality botanicals will do. We’ve worked incredibly hard to emphasise the importance of using all-natural produce and every botanical is certified vegan by The Vegan Society.”

A traditional, citrussy gin lifted by the freshness of foraged botanicals including sea beet, red clover and chickweed.
Try in a White Lady
Dry shake 50ml Brightside Coastal London Dry Gin and 25ml triple sec with an egg white or aquafaba (optional). Shake again with ice. Strain into a coupe and garnish with lemon peel.

It's hard to believe that it's 10 years since the gin renaissance started - in many ways it feels like it's only just beginning. And it seems like that with every day that passes, the choice of gins gets bigger and better.
